 This is one of my most insanely delicious original dinner ideas. I think it’s especially great during the warm months, but it’s truly delicious any time of year. As it gets warmer out, I get such a craving for fresh seafood dishes. I just love cooking up a filet of salmon and sitting outside enjoying every bite. Whenever I make this for my family during summer weekends everyone is beyond impressed. Just the name sounds like a fancy dish from a gourmet restaurant- but it’s something you can easily whip up at home! Even if you aren’t usually a salmon fan, I’m sure you’ll find this dish irresistible.

Salmon is a great base for a meal because it’s full of so many amazing health benefits. This yummy fish contains more omega-3 fatty acids than most people eat in several days from all other foods. Omega-3 fatty acids are powerful nutrients that can benefit your body in so many ways, from improving eye health to preventing certain cancers. They’re also great at helping reduce chronic inflammation, which is so important for maintaining a healthy gut and keeping your body in balance. When it comes to cooking this nutritious and delicious fish, there are so many options for how to season it. For this dish, I season the filets with orange juice, parsley, sea salt, pepper and slivers of almonds. The citrus from the fresh orange juice pairs perfectly with the parsley, while the almonds form a delectable crunchy exterior and pack on the protein. Make sure not to overcook the salmon- this is one of my top tips for making sure your fish turns out fabulous.

The cilantro cherry quinoa is the perfect side to bring out the flavors in the salmon. Quinoa is one of my favorite nutrient packed grains. It’s so quick and easy to make and light enough to eat in the summer. I just cook some up in about 15 minutes, toss it in olive oil, and top it off with chickpeas, dried cherries, cilantro, orange zest, sea salt, and pepper. This side is so simple to whip up, but the exciting blend of flavor will blow your mind.
