Creamy White Bean Pasta

I’m always looking for new gluten-free, dairy-free, vegetarian recipes that taste great, are full of nutrients, and can be made quickly when you don’t have a lot of time. This Creamy White Bean Pasta is one of those great recipes. Most of the ingredients are items you probably keep around in your kitchen, and you won’t believe you made such an out-of-this-world dish in twenty minutes- yep, just twenty minutes!

I love finding ways to make creamy, melt-in-your-mouth dishes without the dairy. I’ve never been able to drink milk, so I’ve had the time to experiment with lactose free milks and fully develop my love for almond milk. Almond milk is a great replacement for milk if you’re lactose intolerant, vegan, or otherwise dairy free. It’s similar in cost and nutritional value, and can be used in many of the same recipes- I find that it actually works better than milk in many dishes because it brings its own flavor.
That’s why I’ve developed this pasta dish with a creamy almond milk based sauce. It’s easy to make and soo much better than a store-bought sauce or dressing that’s packed with chemicals and processed ingredients. The sauce tastes great with the velvety texture of the beans for an incredibly smooth dish. To balance all the silkiness from the pasta, sauce, and beans, I’ve piled this dish with veggies and topped it off with sesame seeds and pumpkin seeds.
This dish is great for spring because of the vibrant hues coming from the veggies- zucchini, red bell pepper, corn, and arugula. I know a dish is packed with all kinds of nutrients when it looks like a rainbow in a bowl.
This is another dish that can be made ahead of time and stored in the fridge so you have leftovers throughout the week. Pack this pasta for lunch and I promise the colorful dish will brighten up your day come lunchtime!
