February – Basil Cornbread

One of my favorite parts of my job is developing creative and delicious new recipes for my clients. I find that some of the most unusual flavor combinations can lead to the best results. I have a lot of restrictions on what I can eat, so it’s important for me to keep things creative and enjoy the foods I can eat in a variety of ways. People are always impressed when I add a fresh flavor to an old classic. It’s amazing how a little basil and cinnamon can totally revamp a standard dish like cornbread.
This Basil Cornbread is one of my favorite kitchen creations. Cornbread is always amazing on a cold winter night. It’s soo warm and sweet and just seems to hit the spot every time. What’s great about this recipe is that it’s so versatile and tastes delicious on its own or as a side with dinner. It’s amazing crumbled over top of veggie chili or tomato soup, yet sweet enough to eat for dessert with some dairy-free ice cream (the cinnamon and basil help sweeten up this cornbread so it’s a perfect post-dinner treat). My personal favorite way to enjoy it is super simple- just toast a slice of bread and drizzle with honey. It’s a decadent way to start the day or a yummy midday snack.
I also love this basil cornbread because eating something so warm and satisfying always reminds me of how good it feels to take care of myself and give my body what it craves. Sometimes this means eating veggies and quinoa all day, and sometimes it means indulging in sweet, wholesome bread fresh out of the oven.
